🥃 Grace O’Malley Maritime Cask — 40% ABV

Inspired by the legendary Irish pirate queen, Gráinne (Grace) O’Malley, this whiskey is shaped by the west coast’s wild, oceanic character. The brand is known for its beautifully balanced blends and its focus on marrying oak types to add subtle depth and maritime influence.

Tasting Notes:

Nose: Vanilla, light toffee, subtle brine
Palate: Creamy texture with honey, tropical fruit, sea salt
Finish: Smooth and rounded with gentle maritime warmth

About the Whiskey / Distillery:

Grace O’Malley works closely with multiple Irish distilleries, selecting barrels and marrying whiskeys of different ages to achieve a signature style: approachable, lightly coastal, and gently sweet. Their Maritime Cask editions capture the essence of Ireland’s west coast — soft brine, warmth, and rounded sweetness.

🥃 Dingle Single Malt — 46.3% ABV

Produced at the Dingle Distillery on the far edge of County Kerry, this whiskey represents one of the first true “new wave” independent Irish distilleries to return after the industry’s decades-long contraction. Dingle is known for small-batch release philosophy, artisanal production, and a focus on local climate-driven maturation.

Tasting Notes:

Nose: Sea breeze, citrus peel, toasted oak
Palate: Malty sweetness with coastal minerality and salted caramel
Finish: Lingering maritime freshness with soft spice

About the Distillery:

Founded in 2012, Dingle sparked Ireland’s craft distilling revival. Located in a converted sawmill on the Atlantic coastline, its whiskeys mature in a cool, damp, maritime climate — contributing to their signature freshness, spice, and coastal salinity. Every release is small-batch and highly sought after.

Why We Love It:

It captures a sense of place better than almost any modern Irish whiskey. Fresh, vibrant, and textured — a brilliant middle whiskey for this month’s tasting.


🥃 Sailor’s Home “The Horizon” 10-Year-Old — 43% ABV

Sailor’s Home is a storytelling-driven Irish whiskey brand that draws inspiration from Limerick’s historic Sailor’s Home — a real 19th-century refuge for seafarers. The brand focuses on global influences, spice-led blends, and adventurous cask finishes.

Tasting Notes:

Nose: Orange peel, caramel, sea spray
Palate: Butterscotch, oak spice, coastal herbs
Finish: Long, warming, softly salted
